I live alone so only have to worry about myself. Thank goodness. It would be SO HARD for me because I have never liked to cook ..nor was a good cook.. 9 teenagers in the house at the time could vouch for that. LOL I too am blessed with a mini crock pot.. and a can opener... i combine things togather to make soup type meals... and freeze the other 1/2 for another pot at a later date. God Bless you girls that are doing so wonderfully and takeing care of your families too. Alice

Sometimes I end up cooking separately because our schedules are so different, but many times they eat whatever I eat. Some of their recent favorites are chicken fajitas, tortilla pizzas, baked ricotta, and oven baked popcorn shrimp. Most all of those are very easy to do and everyone likes it.

My husband and I are empty nesters - the easiest thing for me to cook are things on the grill - chicken breasts, steak, pork chops. I use various salsas, or no sugar applesauce to dip the meat in to keep moist. He prefers hash browns and they are easy to cook a small portion for him. I've found the Green Giant frozen vegetable singles and cook those too - they are just the right size portion for both of us. I would like to use my crockpot more, but my husband doesn't like rice and most recipes I find are served over rice - suppose I could use pasta for him. It is also a challenge as he does not like most cassarole type dishes - his mother never made them. It was always meat and potatoes

I usually eat with my boyfriend and he is fine with whatever I make. We eat a lot of meatballs with NSA sauce, variations of Shephards Pie topped with either Cauliflower or Sweet Potatoes instead of white potatoes. I feel like I am running out of ideas though..... I will have to try the crockpot! LB

I was lucky that my dh & I were already empty nesters at the time of my surgery, so I never did have to deal w/ our kids' eating oddities! Early after my surgery, yes, I did pretty much eat different things than my husband, but by the time I could eat a full variety of foods, we were usually on the same page. Now, I never have to make something separate for myself. The only exception might be if he's eating leftovers and I just don't want it again--I might just do a tuna melt or something easy for myself. If I make a casserole, I dig out more of the protein/veggies for my portion, but I do eat pasta/rice in moderation w/ no problems. Virtually any kind of meat, veggies, or other side dish I make, we both eat, but I just eat less (hopefully!). No matter what I make, I generally make enough for leftovers; that way, I only have to cook a few times a week. I am SO lucky that my dh will eat anything! Jo

I cook the same thing for me and my son. Mostly stuff from 'before/after' bariatric eating cookbook. Add with that a bunch of veggie sides and works for me

Well considering that in my family... my husband is currently overseas... its just me. I try to cook little meals that are good for me that I hopefully wont have left overs for more than a day or i wont eat it. I like cooking steaks, chicken, etc. I try and stick with pure protein meals, and try to make sure the carbs are far far away. Krissy AKA Navywife25

My husband made some awesome burrittos a few days ago... I decided to just eat the filling (and not the tortilla... it wasn't whole wheat).
