Rainbow Weigh-in: Week of 08 May 2011
I didn't see this up yet, so I figured I'd put it up. Taking a break from my finals (online courses).
Starting weight: 12/14/2010, 270.1
Two weeks post-op: 249.9
Today is almost 21 weeks post-op: 200.5!!!!
What a Mother's Day gift to myself! 70 pounds GONE :) I am running out of bras, underwear, shirts and pants that fit me right and I only have 3 pairs of shorts, all with drawstrings...all laughably large on me now.
I have started a garden on my patio and was just invited by a neighbor, who runs a community garden in the back of the property to use some space in his garden for my eggplants and cucumbers, if I want. We are doing a CSA this year (community supported agriculture) with a small farm across the street from us and I am starting to make my own hummus, baba ganoush, pita bread, naan, blue corn tortillas, etc.
I will be taking 14 units this summer and transferring from the community college to a 4 year college (housed on the same campus!) in the fall for Culinary Arts and Nutrition. I am pretty darned excited!

Wow, you're almost below 200. That's wonderful - and so is your new picture.
I've been on the road this past week and won't be back home until next weekend. So, I have no scale and don't know how I'm doing on my weight. But, at least the pants are still loose so I must be doing OK.
For those that travel or are away from home, I've found that maintaining my diet has been rather easy. For example, Wendy's has a side salad for a little over $1 that fills me up. I also asked the hotel to provide a small refig in my room (which they gladly did at no additional cost****ep that stocked with my usual protein drinks and Carb Master yogurt. Also got some deli salads that I also keep on hand.
Very anxious to see what my weight is next week.
Thanks, One! I've been watching your progress and you're doing great as well!! I love CarbMaster yogurt, especially the strawberry colada (I throw in some pineapple...yum!!) and strawberry banana. I am experimenting with using plain, fat free organic yogurt and my own additions....yesterday was some fresh strawberries, fresh blueberries minced in my mini chopper with a little bit of sugar free raspberry Torani. AMAZING!! I have my last two finals online today and when I am DONE (man, I can't wait!!!), I am going to be heading to King Soopers for some dried chickpeas and a few other things. I am going to make hummus and pita bread from scratch. I may try adding some protein powder to the hummus since I eat so much of it these days. My pitas will be made with WW flour AND soy flour. I'll let y'all know how they turn out. I have about 3 weeks until summer semster starts (with 14 units....I won't be around much) and I'm going to use that time to get some of my recipes in motion and making my daughters' summer clothing. The sewing machine beckons!
Danny....it'll happen! When's your surgery? I think I only lost 8 pounds immediately before surgery, but lost 20 in the first two weeks post-op!

Well, as long as you're cooking, try this. (Recipe can be doubled.)
You Won't Believe it's Cauliflower Pizza Crust
1 cup cooked, riced cauliflower**
1 egg
1 cup mozzarella cheese
1/2tsp fennel
1 tsp oregano
2 tsp parsley
pizza or alfredo sauce
toppings
mozzarella cheese
Preheat oven to 450 degrees fahrenheit.
Spray a cookie sheet with non-stick spray.
In a medium bowl, combine cauliflower, egg and mozzarella. Press evenly on the pan. Sprinkle evenly with fennel, oregano and parsley.
Bake at 450 degrees for 15-20 minutes (20 minutes if you double the recipe).
Remove the pan from the oven. To the crust, add sauce, then toppings and cheese.
Place under a broiler at high heat just until cheese is melted. *** To rice cauliflower means to get a head of raw cauliflower and cut tops off with not much stem. Then put in food processor and pulse or chop very fine. It should be the consistency of rice.

I personal didn't make pizza out of them, but they make delicious mock bread sticks cut in wedges and dipped in a marinara sauce.
