Hello Again!  So last week I shared with you my yummy snack find - the Dry Roasted Edamame by Seapoint Farms.  They are so yummy.

This week I thought I would share a recipe that I created myself, Turkey Meatloaf Patties!  I'm not sure of the calories, etc but they can't be that bad for you.  I am sure if you were concerned you could figure it out.

1 pound of ground turkey
a handful of uncooked whole grain oatmeal
small handful of shredded carrots
small handful of shredded zuchinni
a teaspoon of minced garlic
two teaspoons of dry onion soup mix
Pepper
(no need for salt, the onion soup mix has salt in it)

mix all ingredients together gently, be careful not to over mix.   Form the mixture into 6 to 8 patties (yes, it goes a long way!) and cook in a pan with some non-stick cooking spray until done!   I served this over cauliflower couscous (sooo easy and yummy!) with some low fat brown gravy & mushrooms.   It's a hearty dinner, reminds me of comfort food I ate 75lbs ago!

YEAH!!!  Im so glad to see someone else making meatloaf patties.  I made meatloaf the other day and did not feel like waiting over an hour for it to cook... so I turned them into patties and cooked them up.  OMFG They were NUMMY!!!

Sounds yummy. Do you just use white turkey meat? Do you use egg or anything to hold it together, or does it just stick on it's own?

Hi There!  Nope, I don't use an egg.  The mixture does a good job of staying together but you could add an egg if you thought it might help.  I always use white turkey meat!  The veggies help keep it very moist!
