YUM - Kashi !!!!

For those that know me, you know I LOVE to cook. I created a 15 minute dinner tonight and I had to share it because I am so happy with the outcome. It's healthy too!
Jamie's Vegetable Pilaf
1 package of Kashi Whole Grain Pilaf (it's made with barley, quinoa, etc etc... and so good!)
2 carrots
1 handful of spinach
1 handful of baby portobello mushrooms
2 teaspoons of sliced almonds
2 tablespoons of shredded parmasean
chives (add to your likes)
salt & pepper to taste
1 tablespoon of Olive Oil
Follow directions for the Kashi Pilar, it's easy and takes 90 seconds in the microwave. In a small food processor process the carotts, the spinach and portobellos in seperate batches to your desired consistency. Add to a skillett and warm, season with salt and pepper. Add finished pilaf to the skillett and warm through. Top with sliced almonds and shredded parmesean cheese. I had it as a vegetarian but you could add chicken to it as well.
I am stuffed and can not wait to have the leftovers for lunch tomorrow!
