OMG!!! Protein Low Carb Crepes that ARE ROCKIN!

2 Eggs
2T Vanilla Protein Powder
splash of vanilla
Artificial sweetner (7 drops or one packet)

Beat egg, mix in other stuff heat a small (6 in) pan with a small amount of butter.. or not... use 1/3 of the mixture to coat the bottom of the pan. Let sit 30 seconds, flip 30 seconds. Do this 3 times to make 3 crepes.

Filling

1.5 oz cream cheese
1 t cinnamon

splash vanilla to taste

mix and put in the middle of crepes..

I did a few things different. I used Pam instead of butter, 3 egg whites instead of eggs (yolks make me dump) and greek yogurt instead of cream cheese (cream cheese makes me dump..)

With my changes the nutritional value was:

Calories 120
Carbs     3
Protein   23 (yes that reads 23!!)
Fat        0

It was crazy good.. I mean I was in France or something.

I actually made it with cottage cheese and a little banan today. YUMMO!!

I'm totally trying your recipe and here's one in return that a co-worker gave me

3 large eggs
3 packet Splenda (small coffee packet)
2 pinches of cream of tartar
3 ounces cream cheese (not Tbsp!) Do not soften!

Preheat oven to 300 degrees.

Separate the eggs into egg whites and yolks.  With a mixer, whip egg whites and cream of tartar until stiff (about 4 minutes).  The longer you whip the eggs the more stiff it will be (that’s a good thing)  In a separate bowl, use a mixer to mix the yolks, Splenda, and cream cheese (if you're using the same mixer, mix the whites first and then the yolk mixture).  Using a spatula, gradually fold the egg yolk mixture into the white mixture, being careful not to break down the whites. Spray a cookie sheet with non-stick spray (or use a nonstick pan) and spoon the mixture onto the sheet, making 6 mounds.

Bake about 40 minutes (You want them slightly softer, not crumbly). Let cool on the sheet for a few minutes, and then remove to a rack and allow them to cool. Store them in a bread sack or a ziplock bag to keep them from drying out.

    ****If you want to eat it like a pancake I would use Smuckers Sugar Free Syrup  it’s the best!!  Instead of butter put a cake into the microwave with just a little bit of cream cheese on top and microwave for about 7 seconds and it taste like you are eating pancakes with butter and syrup J

Wow, that sounds good.  I thought i'd said goodbye forever to pancakes and crepes....

...I don't buy vanilla protein powder, but I might have to beg some off some body builder friends to try these!

I actually use toffee protein. You really could use any flavor. Well maybe not the fruity ones, but hell even those might work.

It's by Elite Protein. It's not bad... Very light flavor, so you can really mix it into anything and it adapts that flavor.

Hi all,

I made this today with the exception of instead of making three crepes i made three mini pancakes. This tasted better than the fake french toast i have made with cream cheese. I added 1/4 cup of sugar free mrs butterworths which is really good and i had a 20 protein pancake breakfast. yippee

ps....i use BSN lean dessert whipped vanilla protein powder which is very sweet on its own and no need to add any splenda to the mixture. this is the best protein powder i have tried. i use it every day in coffee to make a vanilla latte.....i look forward to it so much and miss it when i dont have one!!!
