Best meal since the surgery

Hi all -

Just felt like sharing a silly but happy moment.  I haven't really enjoyed food all that much since the surgery.  To clarify, I've had things that tasted good but I haven't really enjoyed them the way I used to.  Whever I eat I'm hyper conscious of my chewing, of my portion, of if the food's moist enough, etc., etc., etc..  It tends to makes me so conscious of the fact that I'm eating that I don't really savor the food, and tend to think of it almost as a chore, most of the time.  On top of that, times are lean, I don't have much money, so I'm buying what I can and doing my best to cook it myself.  Being new to the kitchen, my experiments haven't always been top notch.

Tonight I just wanted something special, some sort of treat and didn't really feel like cooking anything difficult.  With that in mind, I went to the market and picked up a 5 ounce filet mignon and some pre-made mashed sweet potatoes (checked the label, allowable fat and sugar levels).  When I got back home I seasoned it and put the filet in my Nu Wave oven.  I scooped out a couple of teaspoons of the sweet potatoes onto the plate, nuked it and put a little bit of smart spread on them.

Knowing my own cooking skills and not expecting much from store bought sweet potatoes I sat down to watch Lost with my roommate, plate on my lap.  When I took my first bite of that meat, though, it was so good I nearly forgot about the show. 

It was the first time I've really, truly enjoyed something I made since the surgery.  There was a part of me that somehow thought that sitting down and having a delicious piece of steak would be gone afterwards...it was really nice to have a moment of deep culinary pleasure again.  

Even better was knowing it was all on my plan and I didn't cheat doing it!

That sounds like an ******ic experience  LOL  but I know what you mean.  after being on a mostly liquid diet for the better part of a year and a half prior and for the first few weeks after surgery.....with each stage of going back to solid foods, the taste was like ambrosia........totally ******ic!
