QOTD 5/29
I'm more mindful when eating, which makes just about any food more interesting. (During the "full liquids" phase, I was noticing "floral" and "vegetal" notes in my cuppa Campbell's Tomato Soup!! Hey, I had nothing else to do back then!)
I didn't have any trouble kicking my Diet Pepsi habit (though I'm still not convinced that it makes much of a difference, given that I mainline as much or more Crystal Light every day!)
My SO and I have been more adventurous after my surgery, in an attempt to keep meals interesting. I was never much of an egg man before, but now, an omelette once a week filled with roasted onions and peppers is like ambrosia! And while I'm not an ethical vegetarian, I can go for days w/o eating meals with meat.

Yes, I would have never eaten jello or puddings and now I am willing to. I look forward to cottage cheese and plain yogurt which I would've turned my nose up about before. I crave Mexican food and spicy food which were so-so before. Tuna from a can or packet is the biggest change. I wouldn't have touched it at all before. Now I eat it 4 times a week. I hated it! Now I enjoy it. I don't understand any of this!

Big changes, no pun intended.
I never did like spicy stuff before, now I live with Newman's Own Mango Salsa and Old Bay Seasoning as two of my best friends. I hated tomatoes with a passion before and now I will eat them. Not a lot, and not often, but I will eat them, and when I think of all the vine-ripened tomatoes I wouldn't eat as a kid, I really start to think I missed out on something. WEIRD! I like avocados too, and I couldn't ever bring myself to even try them. They just looked too strange to me.

Since I'm banded rather than bypassed, I haven't experienced major changes in tastes, just in behavior.
I still like all the old things that got me into trouble, but I've acquired a taste for many new things that don't. I eat more veggies and fruit now than I ever have, and way less fat. I live on skinless chicken thighs and turkey with a rare steak thrown in for a little variety. I avoid carbs like the plague because, as the Lay's potato chip people used to say, "nobody can eat just one."
I also eat spices to add some flavor since there's so little fat in the food I cook (I used to live on chops, steaks, and junk food). In fact, I use so many spices that I buy bulk quantities from Amazon.com for the first time. Never needed to do that before.
