Chicken Salad?

I am soooo ready to start adding chicken salad into my diet! I know alot of folks here eat it, so I was wondering.. Does anyone have a good recipe or a brand that is good? I want to be prepared! so ready for some FOOD, lol Thanks!

Kimberly, So, you are tired of the liquid diet, and the soft foods diet, huh?? I know that those two diets can be very BORING!! I know that every Doctor's diet is different. But just to let you know, I was not allowed to eat chicken for 7 weeks. So, if you do it before then, just be careful. The chicken salad that I like the best is from My Friend's place, and Honey Baked Ham. Norma

Oh I know I cant eat it right now. I am getting a bunch of recipes together now so I won't be as lost when its time. Also just some brand names too. I am into phase 2 now, so it shouldnt be too long from now. Thanks!

Kim...I have a great recipe, but you couldn't have it until later on, I wouldn't think....I'm not sure about amounts. I kind of just play it by ear: Take 2-3 chicken breasts and boil them until done (this makes the chicken much more moist and easier to tolerate) Cut the chicken into small cubes Mix the chicken with mayonaisse (I use Dukes)...use however much you would like. Add in some white or red grapes cut into quarters (whichever you like the best) Add in some chopped walnuts (again...this is when you can tolerate such things...I would wait for a while on the nuts) Add in about a tablespoon of honey (to taste) Add salt and pepper to taste Mix well. I can't wait to eat this. If I get cleared for real food tomorrow...I'm heading straight to Chick-fil-a for some chicken salad and diet lemonade. The salad from Zaxby's is really good too.

That sounds yummy! I am just trying ot get some info for when its time. We are a week apart from our "rebirthdays". I hope that you get cleared and will be able to eat some real food. This is the really hard part for me. But I am handling it pretty good. My family even had a HUGE family get together last Sunday and it was like torture! All that fried chicken, potato salad, beans, steak, and deviled eggs. not to mention all the desserts. I wanted to cry! But I held my own and ate some jello, lol I bought some yogurt, but I am scared to eat it. Not sure how it will go on my stomach. I will get to it eventually! Good Luck at the doctors office! Hey Kim...I'm so happy for you and your weight loss...It seems like you are doing great... As for chicken...I eat chicken breast oven baked slices (buy it at BJ's by Oscar Mayer (sp?) ) and tolerate it withoit any problems... it has no carbs, only 25 kCals per slice and high in protein... something like 7 g. per slice)..I eat a slice or sometimes even two for lunch with a small piece of porvolone cheese... it sits real well and there is no guilt with it...my nutritionist is happy with this too.... Chicken salads however, I think, more of a challenge to us if they are done right ( like Stephanie's with walnuts and grapes, and I like small bits of celery in mine too )....So I'm going to wait on that one for atleast a few months... Off the topic of chicken , I can't wait to hear about your HB reaction when he comes back home and sees your Gorgeous Self...... take care , Rita.

I too am really tired of the liquid diet, but I'm allowed to start soft foods as of today. I've heard that the easiest way to eat chicken is when it is pressure cooked because it is sooooo moist. I can't wait!!! BTW, do you know how much you've lost yet? I've lost 14 pounds!!! Hugs! Gretchen

I baked some chicken yesterday then put it in the food processer and softened it up with some chicken broth. I haven't eaten any of it, but I did get a little bitty taste and it was GOOD, lol I miss sinking my teeth into food and chewing. I know that sounds so caveman like, but what I would give to tear into a piece of chicken right now! LOL Since I came home from the hospital, I have lost 19.5 pounds. The kids are so thrilled and so am I. I pulled out a sundress I havent been able to wear in several years. Kids jaw just dropped when they saw me wearing it! I still havent told my husband about any weight i have lost. He hasnt asked, lol I just want to surprise him when he comes home in November. Take care! Kimberly
