Hey everybody! I grabbed this one off the main message board and thought it appropriate for the upcoming holiday! Pumpkin Cheesecake 2 pkg. (8 oz. each) PHILADELPHIA Fat Free Cream Cheese, softened 1/2 cup splenda 1/2 tsp. vanilla 2 eggs 1/2 cup canned pumpkin 1/4 tsp. ground cinnamon Dash ground nutmeg 1/3 cup HONEY MAID Graham Cracker Crumbs 1/2 cup thawed COOL WHIP FAT FREE Whipped Topping Preparation MIX cream cheese, splenda and vanilla with electric mixer on medium speed until well blended. Add eggs; mix until blended. Do not overbeat after adding eggs. Remove 1 cup batter; stir in pumpkin and spices. Spray 9-inch pie plate with no stick cooking spray; sprinkle bottom with crumbs. POUR remaining plain batter into crust. Top with pumpkin batter. BAKE at 325°F for 40 minutes or until center is almost set. Cool. Refrigerate 3 hours or overnight. Top each serving with 1 Tbsp. of the whipped topping. I think I'm going to try and make this one myself tonight! -Phoenix

That's sounds good. I actually have everything here to make this But I'll crush LF graham crackers to make the crumbs and reduce the fat even a little more. Thanks

I too tried Wasa last year when I went on the Atkin's Diet, they are awful...the only ones I could eat were the cinnamon graham one's (they aren't nearly as bad as the others)...but I did find some low fat cinnamon crackers from honey maid today that I can use! (thanks for the tip!) -Phoenix

Ooooooorrrrrrrrrrrrrrr... (if you are post op) you can just go to the cheesecake factory, order a whole punpkin cheese, and eat the whole thing, washing it down with a big ol' soda bottle in front of the TV!!!! (wearing a moo-moo of course!!) Sorry, I'm in one of those stupid moods! -Flávia

Phoenix, Thank you so much for taking on the responsibility of posting a new food item each day! I've enjoyed seeing all the new recipes. However, I do have a question.... can you include the "stats" for each recipe? You know, just the main ones: calories, carbs, protein, sugar, fat, etc. Since I'm very much in the learning stages when it comes to nutrition it would be a tremendous help to me & probably others, too. Again - thank you for all of your work & the great ideas! Vickie J.

Yumm! That sounds too good! I don't know if I would be as good as I should with that but I think I' ll try it anyway. I wonder how many servings it makes..and how many calories. Kallen
