banana bread
i ordered the artificial sugars from bariatric eating.com. Last evening i experimented with a banana bread recipe (I miss baking!!!) Well i simply subsituted this artificial sugar, added protein powder, used soy flour instead of regular flour. Result: awesome!!!!
The taste, texture and color are perfect. I would love to share the recipe if interested.
melt and cool 1 and 1/2 sticks butter
4 bananas, 1 cup (i use a bit less cuz i dont like real sweet) sugar
substitute mix with wisk attachment for four minutes (like banana cream texture) then add 2 eggs and 1 t vanilla mix another 2 minutes.
in separate bowl mix dry ingredients together
2 cups flour, 1 t. salt, 1 and one half tsp baking soda
add dry mixture to banana mixture on slow speed. add in protein power and 1 cup of nuts.
spread mix into prepared loaf pan
bake 350 degrees one hour and ten minutes.
makes a huge loaf!
Thanks Cyndi. Sounds good I think I will try it soon. Since we are talking about the artificial sweetners. Are they all okay for postop or just certain ones? I like Splenda real well but then I just want to do this all right.
What kind of sweetner did you get from the bariatriceating.com?
Does anyone know if this is necessary or can we use the ones from the groceries?
