if it makes you feel better.. and I apologize if it makes you feel worse :)  I am at 212ish.  I was rocking down until I hit 204, and felt for sure I'd crash through 200 and see that awesome 199.. that was about 10 months ago...  My body decided it wants to be at 212.  You know I finished a half ironman and I am ramping up for the full.  Although I might cheat now and then and have ice cream (frozen yogurt) with the kids, I eat right, usually stay at a net neutral to slight negative on cals to exercise, and I still am on what many would call a lower carb diet (in spite of ironman training) - but I have to just be happy with the weight, because if it isn't coming off with all the training I do, it ain't coming off.  Would love to be under 200 for a lot of reasons, including performing better in the IM...you know when folks used that cliche that we have to be happy with who we are? ..and alot of times its just a rationalization for not changing?  In our case we really have to be happy with who we are :)

Andrew,
What is your daily intake for calories, protein and carbs. I do some carbs mainly fruits and veggies, very few from whole grain breads.

I have upped my calories by adding back protein bars and shakes.

it varies with the workouts.  I try to match so I stay around -500 calories net.  I'd guess on a rest day I do around 2k, and on heavy workout days I could be as high as 4k, and of course on half ironman days... well, who the heck knows :)

I just had an unfill today on my band, because I really need to get more carbs in, and with my band the way it was, any bread was seriously work for me to eat.  I am adjusting right now to where I do a bowl of oatmeal for breakfast, with some protein powder mixed in, bananas mainly for snacking as well as plain greek yogurt (I love the stuff), a protein shake or two mixed in here and there (I use Syntha 6), some protein for lunch, and a balanced dinner, nowadays adding in more and more veggies.  I am looking ot start adding in a higher carb lunch, so maybe some whole grain breads and such.  I also do a lot of hummus.  I eat a lot of fish and beef, chicken is basically the devil for me with the band- I can't even be in the same room with it or I get stuck.

I've gotten now to where I just know how much I need to eat based on my routine for the day, and if I do splurge, I usually almost unconsciously add the extra workout.  That said, I seldom look at food as much more than fuel anymore, which is a good place for me to be considering my past, where food was everything!

What worked for me was to go on a very low carb diet (Atkins). for two weeks then I will start adding more carbs.
