I am currently running 5 miles fairly comfortably ranging between 52 to 60 minutes.  Training for my next race which is 7 miles should I focus on adding distance and build up to the 7 miles or should I try upping my speed on the current 5 miles? Thanks for any  thoughts.

yes.  :)

You can do both.  Have you looked at training scheduled for 10Ks (I know you are running more than that for your race, but it's close) online?  Most will have you do one day of speed work, and adding distance on your Sunday run.

Here's an example:

I'm following his 1/2 Marathon training plan and it's quite similar.  I know your race is a few weeks away, but you can jump into this if you want to try working on some speed.  I think if you can run 5 miles, then you can probably run 7 in a race.
