I'm not really looking for what is best, just some input on how the difference feels to you if you have switched from one style to the other.

I'm more concerned with the hills, I like having my granny gear, but maybe having less of that will make me a stronger hill climber.

I guess it depends on you.

I have a friend who rides granny that's a better cyclist than me. She does more hill work than me.

People who have a compact like that too.

I'm sorry I'm no help...I've only had regular front cranks/2 chain rings.

 I think it really comes down to 2 things:
1)  How big/nasty are the hills in your neck of the woods?  I imagine you've got some nice climbing out there!
2)  Find out the difference in front deraileur from your LBS.  It is possible that with a triple you'll not have 30 gears but about 25-27 depending on chain rub.  After having the double I LOVE being able to trim that front deraileur out.
