Excellent Dinner

I just made an excellent chicken for dinner - here is a brief version of the recipe (the one I used, I did not use exact measurements) 2 chicken breasts - pound until flat fat free Italian dressing Italian seasoned bread crumbs 2 - 4 pieces of string cheese pound the chicken, dip in the dressing, coat with the bread crumbs. Roll each piece of chicken around 1 or 2 pieces of string cheese. sprinkle some olive oil on the top of each breast bake 350 for about an hour Lucas and Dan both thought this was excellent!

I have baked chicken breast marinated in fat free Italian dressing and it is good. But I bet it is even better bread crumbs and string cheese. Healthy as well. Why didn't you ask your ol' friends Ron & Cathy over for dinner? We would have brought the SF desert plate. Ron

The next time my AWESOME friends Ron and Cathy are in the Chicagoland area I WILL make this for them I have made chicken marinated in the dressing before but this was the first time with the bread crumbs and the string cheese. The recipe said you could spice it up by using different cheese, a slice of ham or something else different but I liked it just the way it was. Although, I LOVE pepper jack cheese and I have some individual servings of that, wonder how that would be rolled up in it?? Hope whatever was bothering you the other day is good now! Hugz and Nancy

YUMMY! That sure sounds good, thanks for posting this. I have a potluck Holiday Party to go to and need either a Vegetarian Dish, Sugar-Free Desert, or a Low Carb Food. This just so happens to be a Vegetarian dish as far as I am concerned. THANKS!!!!

Hi Annie! I hope you were talking about when you were going to come back so I could show you the rest of the island we did not get to see. I am good and you two? Yes, I had a great time with the family. Weather was a lot warmer than I was hoping for, but it was nice to see everyone. I was not able to meet Beckie this time, but hope to one day on my visit to CT. I was there the same time as her husbands back surgery and Mallory's birthday. Aloha, Linda

Sounds delicious.. but like YOU.. I lust Pepperjack cheese and would try it with that. I put pepperjack on my morning eggs.. my afternoon tilapia.. my later afternoon pickle everything is better with pepperjack
