Excellent Dinner
I just made an excellent chicken for dinner - here is a brief version of the recipe (the one I used, I did not use exact measurements)
2 chicken breasts - pound until flat
fat free Italian dressing
Italian seasoned bread crumbs
2 - 4 pieces of string cheese
pound the chicken, dip in the dressing, coat with the bread crumbs. Roll each piece of chicken around 1 or 2 pieces of string cheese.
sprinkle some olive oil on the top of each breast
bake 350 for about an hour

The next time my AWESOME friends Ron and Cathy are in the Chicagoland area I WILL make this for them
I have made chicken marinated in the dressing before but this was the first time with the bread crumbs and the string cheese.
The recipe said you could spice it up by using different cheese, a slice of ham or something else different but I liked it just the way it was. Although, I LOVE pepper jack cheese and I have some individual servings of that, wonder how that would be rolled up in it??

Yes, I had a great time with the family. Weather was a lot warmer than I was hoping for, but it was nice to see everyone. I was not able to meet Beckie this time, but hope to one day on my visit to CT. I was there the same time as her husbands back surgery and Mallory's birthday.
