Ingredients: 2-3 chicken thighs, whole fresh nappa/Chinese cabbage, can of bamboo shoots, 1/3 cup of peanuts, minced garlic, minced (tube) ginger, sesame oil, soy sauce, white pepper, red pepper flakes, corn starch, chicken broth, and peanut oil.

Now the rest is estimates of quantities.

Slice chicken thighs into small strips and place in a medium size bowl, add 2 Tbsp minced garlic, 2 Tbsp minced ginger, 1 tsp white pepper, 1 tsp red pepper flakes, and 1/2 + cup soy sauce. Stir and set aside.

Slice the cabbage into 1/2" pieces and only use the white crispy portion. Rinse in a colander and add the bamboo shoots. Set aside.

Make a slurry of chicken broth and corn starch. About a 1/4 cup of broth and a heaping Tbsp of corn starch. Set aside.

Heat the peanut oil at medium high in a large dutch oven or wok. When hot, add the chicken and stir fry until done. Put the peanuts in the medium size bowl you had the chicken in. Take out the stir fried chicken and put it back to medium size bowl over the peanuts. Stir.

Drain any of the "gravy" from the stir fry chicken back into the dutch oven. Heat to medium and add the cabbage and bamboo shoots. Stir and cover. Let the cabbage stew until steam rises around the edge of the pot (maybe 5 minutes).

Uncover and add the chicken and peanuts. Turn the heat off and add the corn starch binder. Stir and serve.
