We buy quick frozen Cod white fish from Trader Joe's. I melt some butter, add fresh lemon juice, garlic salt and pepper. Bake at 350 for 10 minutes; broil for 4 minutes. Then I put some of my favorite tarter sauce on it. I love this stuff: Duke's mayo, fresh lemon juice, dill relish, dried parsley, and kosher salt.

Sounds good! Do you brine your pork chops before you cook them? That's the only way I can eat chops any more. Seems pork is too lean and dense for me. I can slow cook pork shoulder and be fine, but chops are difficult unless brined for 48 hours.

I hadn't thought of brinning. Eating pork chops are a little difficult for me too. I look for the assorted packs, not too thin but plenty of fat. I prefer bone in. ? I usually make sure my bites are a mixture of fat and meat together. This way I can eat about 1 pork chop in total if I pull meat from two separate chops. The Center cut is very lean.
To avoid wasting, I often share protein with my husband or one of the boys.
Pork shoulder sounds good too.
