I weigh myself everyday but I don't worry about day over day fluctuations. Even more important to me is tracking nutrition and steps everyday, for which I use MyFitNessPal on my cell. Tracking steps is one of the most important things you can do to make sure you are moving everyday.
Even minimal exercise will help a lot. Much more so then worrying about weighing yourself.

I think once a week is fine while you are early out. Just don't let it mess you up emotionally if it doesn't show you the results you are looking for in that time period. Sometimes other things are happening with your bosy and the weight loss can seem to stall.
You might also take body measurements. It's the one thing I wished I had done early out. I could still tell by how my clothes fit but the numbers ould have been nice.
