Thinking back to my first month out, I removed the casing on all sausages.  I generally eat the "fresh" kind, not the processed prepackaged kind that's with the hot dogs and lunchmeat, although now that they have the kind without nitrates and nitrites more widely available, I've been trying those, and they are similar to the mass-produced "regular" items. I avoided very fibrous vegetables and hard grains (cooked cereal instead of popcorn, for instance****il I was about six months out, then added them gradually, to see how my new insides would handle them.

Make sure your meats are very moist, use broths liberally with them (gravies and sauces might upset your DS tummy,  most are full of carbs and sugars).
