I think all the low-carb cracker options taste awful or just like cardboard.  I put pepperoni slices in the microwave and make crisps. Also make cheese crisps and use them as a vehicle for protein dips.  I do eat pork rinds, if you scoop up enough yummy dip, you can't taste them.  I use the hot and spicy pork rinds as breading for chicken and fish.  I used to make my own crackers but they really were not worth the trouble.

I forgot about pork rinds and was on amazon for something else and found a version you put in the mircowave.........  my fingers are crossed. I never thought about using a rind as a breading sound delicious.   I did see some home made cracker recipes but the rating was low.  Thanks for your reply you gave me some ideas.

Two thoughts: I used to like the Smackaroos crackers (buy them at Netrition or, possibly, on Amazon). They changed the name (used to be called Cheeters) and, clearly, the recipe, but they're still tolerable, if you put stuff on'em. Much tastier are the "Plain Good Crackers" from a producer called Grammy's Girl. They used to be more widely available; I now see them only at LowCarbU. This makes me worry about their carb counts -- this, and the fact that they really are tasty. I haven't yet tried eating them and testing my blood sugar (a fairly quick and dirty way to determine if a manufacturer is lying about the carbs). However, I have also done serious internet searched (one as recent as three days ago) to see if anyone in the low-carb community had raised concerns about them -- they LC folks are usually pretty active in that area. Nope, not a peep. So you might want to give them a try, cautiously. As I say, they really are delish -- or they were six years ago or so, the last time I tried them.

Finally (I know, this is #3; sue me), I am a HUGE fan of the products made by LC Foods (LS for "low carb"), a small shop in North Carolina. Glen, the owner and developer, is a passionate low-carber. He has several different flour formulations (one for bagels and pizza, for instance; one for cakes and biscuits; etc.), and masses of other stuff as well. I have zero financial affiliation with him; I just like his stuff a lot. Anyway, he does have cracker options. I haven't made them, but I bet they work. His "seasoned bread crumbs" have changed my life.

This is one of the best places to find recipes for just about anything low carb. Some of the crackers are really good.

Actually many of her recipes are really great.
