And now I've tried Oopsies Bread too!!!
There are probably a zillion different ways to make them, but here's what I used:
3 eggs
3 ounces cream cheese
1/8 tsp cream of tartar
Separate egg whites and yolks. Add cream of tartar to egg whites and whip them to within an inch of their life (or until stiff and when you flip the bowl over they don't come out)
Mix the cream cheese and egg yolks together. It said not to soften cream cheese first. And here's where you can go wild, If you want them savory, add some spices. If you want them sweet, add splenda (or sweetener of choice), vanilla, cinnamon, etc,
Fold the two mixes together. Drop mounds onto parchment paper sprayed with Pam. Flatten a little bit. Bake at 300 degrees for 30 minutes. Do not bake until they are dry and crumbly, cuz that supposedly isn't a good thing, Take out, let cool for a couple minutes and remove to a cooling rack. Once cool, put into a ziploc bag, put leave it open so they dry out a bit.
You can freeze these too. I just had one - and while you're never going to go ooooooooooooh bread, it's not a bad substitute. I made mine savory - but I've seen recipes where they are made sweet, soaked with coffee for a bit and then layered with ricotta fluff and sweetened whip cream to make a low car tiramisu. Which sounds fabulous to me.
The one I had was tasty - and I'll be making again and playing around with spices and sweetened things. I'll also be interested to see if the texture changes overnight,
I love them! They are also called Cloud Bread and the recipe and variations can be found all over the place! I love to eat them like french toast!
