How do you make pudding?
Both almond and coconut milk work great iMHO. :) Many moons ago, I took a macrobiotic cooking course, and we used to make rice pudding using brown rice and almond milk. When I just had my sleeve, one of my favorite post-op early stage meals was Bariatric Eating's custard recipe. Unfortunately, it does have milk, but it never bothered me. I think I used Lactaid brand milk at the time just to be safe, but the evaporated milk was just normal milk. http://www.bariatriceating.com/2011/11/04/vanilla-egg-custards/

Lap-Band removed after 7 years and converted to Sleeve Gastrectomy on July 7, 2008 by Dr. Roslin. I've had three happy healthy Lap-Band babies.... and one VSG baby. 5 years out from revision to VSG. Gained 55 pounds in past 5 months, now considering DS. :(
Mix in ricotta cheese with the pudding powder, and just enough heavy cream or almond milk to get the desired consistency while beating. This will turn your pudding into a wonderful protein packed treat.
