How Is It That I Haven't Jumped On The Ricotta Fluff Train Until Now????
This stuff is incredible!!! I sometimes feel a bit deprived when my boyfriend is eating cookies and cakes and candy and ice cream, and I just want something sweet, and this is PERFECT. It's delicious. Up to now, I suppose it just didn't strike my fancy, but now that I know how awesome it is, I'm really sorry that I didn't eat more of it early post op. Oh well - I'll just make up for it now :)

1 large container ricotta cheese
1 pkg sugar free instant pudding (I used chocolate - but I bet cheesecake and butterscotch would be fantastic)
Enough milk to think it to the consistency you like (add a little at a time)

I used to make a version of this except instead of the SF pudding mix I just mixed in the unsweetened Hershey's Cocoa powder and used Splenda to sweeten. You can also add in some banana extract, coconut extract, or almond extract to add additional flavor and mix it up a little. This is making me hungry. I am going to get some ricotta at the store and make some.

Try mixing heavy cream instead of milk for pure nirvana. Cream has much less lactose, and soooooo creamy!
I've gone even simpler for a treat. I mix in a handful of semi-sweet chips, sliced almonds, and a little sweetner of choice with maybe a splash of vanilla. It's very canolli-like.
