faux potatoes
Bought a head of cauliflower and steamed it, then used the immersion blender on it. Turned it into mashed potatoes.
I actually like the taste of them better than potatoes. For dinner, I had spicy meatloaf with faux mashed potatoes. It was wonderful.
Carbs for potatoes are 1/2 cup = 15 carbs
carbs for cauliflower are 1/2 cup = 2.5 carbs (net 1.5 carbs and 12 calories)
carbs for turnips are 1/2 cup = 3.5 carbs

Love mashed cauliflower!!! It isn't heavy in your stomach and doesn't compete for space when you eat steak or other dense protein. Win. Win.

Ever whipped up mashed potatoes? You keep adding milk, cream, butter, etc. and the potatoes just soak it up and can soak up even more liquids. Well, that is what they do inside your stomach also.
You can't whip these and add butter and milk - and expect them to develop gluten and suck it up and hold it. They will get really runny/wet. I drain mine really well before I mash them. Then I put butter on them. I swear, they taste better than mashed potatoes to me.
While potatoes have issues for DS'ers, cauliflower can too...it's a crucifer vegetable (cabbage type) whi*****ludes broccoli, kale, etc...and ALL of them can produce gas! Not in everyone but in many people.
So go carefully and make it the new item if trying it...that way if you get gas/bloat you know the culprit.
