1% milk?  Why?  You can have whole, half and half, or even cream.  Our diet is usually hi protein/hi fat/low carb.  Butter is also your friend.  Sour cream too.  Forget all that low fat stuff.  You don't absorb fat.  Eat all the pork you want, sausage too.  It's protein, therefore it's good for you.

 

Check out paleo bread or any other bread type stuff that's low carb.  Mission makes low carb tortillas you can use as a wrap or as a pizza crust.

 

You're happy with the protein shake for breakfast.  It's fast and easy so keep it.  Here are a bunch of other ideas.

 

MORNING SNACK

nuts, jerky, 1/2 apple with peanut butter, Greek yogurt, cheese cubes, sunflower or pumpkin seeds, deli meat with cream cheese, hard boiled eggs, SF pudding, bacon

 

LUNCH

low carb wrap with as much deli meat and cheese as you want.  Add mayo, mustard, veggies, whatever else you like.  

BLT wrap(low carb)

egg salad, chicken salad, tuna salad either on a wrap or with salad veggies.

Any leftovers that are mainly meat.

 

AFTERNOON SNACK

DINNER

Start cooking!  And I always tell people to cook in bulk and freeze portions.  It doesn't take longer to make 5 portions than 1.  It lets you take advantage of 'family size' packages of meat too.  You have your own fast food always ready to go!  I'll give you some that are ideal for boneless skinless thighs!

Jamaican Chicken(my own recipe)

The night before...

Cube up a big pack of chicken and a big onion.  Add a tablespoon(to taste) of Walkerswood Jamaican Jerk Spice and the juice of a few limes.  Mix in a package of shirataki noodles and let the whole mixture marinate overnight.  Shirataki noodles have a lot more flavor if you do this!  Dump in some cilantro if you have it.

Cook the chicken mixture till it's done in a large saute pan.  Add a jar(or make your own) of Alfredo sauce and simmer for a few minutes.  Serve with grated Parmesan and lime wedges.  Then freeze the leftovers for next time!

 

Easy Cordon Bleu Chicken

Pound out your thighs and try not to get too many holes.  Put a slice or two of ham and some swiss cheese in the middle of each thigh and wrap up like a package.  Put the package edge sides down on a prepared baking sheet.  Repeat till you use up all the thighs.  Sprinkle the top of the thighs with panko crumbs.  It's a carb so use sparingly.  Bake!  Freeze the leftovers!

 

Easy Chicken Parm

Pound out the thighs and do the packages again.  This time use a slice of Moz and a T or so of whatever spaghetti sauce you like.  Top with more Moz, grated parmesan cheese, and sauce.  Bake and freeze the leftovers.

 

Easy Meatballs

Combine hamburger and Italian sausage with some grated parm, throw in a couple eggs, add whatever spices you like and add just a few bread crumbs or panko.  Form into meatballs and bake in a deep baking dish.  When they are done, drain the dish.  Cover the meatballs with spaghetti sauce and put grated Moz on top.  Bake till it's all hot and the cheese has all melted.

 

Tandoori Chicken and Green Beans

The night before cut your chicken in strips and marinate overnight in Tandoori spice and yogurt.  You have to use a lot of spice, it should look very colorful.  You could also add in a package of Shirataki 'rice'.

Cook the chicken mixture in a large saute pan for 10 min or so then add a package of frozen green beans.  Cook till the beans are done.  The dish sort of makes it's own sauce.  You can add some butter if necessary.

 

Easy Pizza

Spread some olive oil and Italian spices on a low carb tortilla.  Use whatever toppings you like as long as it's meat heavy.  Cover with lots of cheese and bake.

 

Stuffed Green Peppers

Buy big peppers, cut off the top 1/4 to use as the top and clean the peppers.  In a big bowl combine ground meat, pork, italian sausage, whatever, add in spices, big cubes of cheese, a couple eggs, a package of Shirataki 'rice', and spaghetti sauce.  Fill the bottom of the pepper 3/4 full with meat, and top with spaghetti sauce.  Put on the top and bake for about an hour.  This works best if you fill the whole pan so the peppers stay upright easily.  I also put more spaghetti sauce in the pan itself.

 

Pulled Pork

Fill your crockpot with a big pork shoulder.  Put the fatty side up.  Add some garlic, pepper, cumin, and a couple bay leaves.  Add some water.  You can do all that the night before and put the whole crock in the fridge if you want.  In the morning, get it out and let it sit while you get ready.  Before you leave, turn it on for about 10 hours on high with the lid on.  10 hours is usually just about right but the way to tell it's done is if you can shred the meat easily with 2 forks and it's falling off the bones.

Put the meat on a big cutting board and drain the liquid out of the crock(you CAN make stock with this or use it for soup, just defat it).  Take the big chunks of fat off and remove the bones.  Shred the meat with 2 forks and put it back in the crock.  Then you can add BBQ sauce(sparingly/high carb) or green/red chile sauce for a lower carb version.  Reheat on low if necessary.

 

Pulled Pork Leftovers...Make Enchiladas!  Fill low carb tortillas with the pork/green chile mixture add some sour cream and roll them up.  Put them seam side down in a baking dish.  Cover with more green chile and shredded Monterrey Jack cheese and bake!  You can use all red chile sauce too.

 

 

This is just a starting point.  Use spices and experiment.  Try new things. DS eating is NOT supposed to be miserable!

They are zero calorie/zero carb.  Isn't that amazing?

They don't taste quite real.  They are sort of rubbery.  Always drain well before you add them to a dish.  I rinse them too.

Invest in a jar Of Walkerswood, that stuff is heaven in a jar and worth every penny!  If you keep it in the fridge, it will last forever!

Steak, roast beef, prime rib, hamburger, pork, sausage, ham venison, beefalo, bacon, eggs, tuna, salmon, talapia, grouper, shrimp, crab, clams, cheese.

Basically protein comes from anything that once had a face.

I really live on protein with VERY VERY little carbs.  I rarely eat a vegetable and limit fruit because it is so high in sugar.  I get carbs from peanut butter, popcorn drenched in butter, protein bars. 

I have a little recipe box with some protein ideas that I turn to and also google atkins recipes.
