Not sure what carbs are best to stay away from

Jazzyone read my post again. I was saying a minimum of 75 grams of fat a day and 125-150 grams of protein a day. I'd be in the hospital if I only got 75 grams of protein a day. 

 

Sumundo, never take your doctor's word that your labs are ok. Track them. They are human they miss things. Also, many of them don't realize that we should aim for the high side of normal on most of our #'s because we fall so quickly.

The keys to eating are moderation and mindfulness.   Yes, I enjoy sandwiches and toast, too.  I rarely indulge in both on the same day.  Once a day is usually my limit.  The worst carbs to be mindful about would be the processed ones (not in their natural state):  anything made with flour and sugar.  Even the processed low carb stuff is full of chemicals and preservatives.  If you stick to whole foods, its best, but I understand that convenience is sometimes an issue.  Just try not to fill your day of eating with such crap.  There are split sides about potatoes.  On one hand, they are still a complex carb, but on the higher glycemic index, so some treat them more as simple (not me, I love em)  Fruits are in the same category - but even more natural sugars.  If you work hard to get your 100+g of protein in first then enjoy an indulgence, you shouldn't get into too much trouble.  Just keep mindful about what you're eating, but I"m not a fan of deprivation at all.
