Caveat: for for a variety of reasons (time, availability, expense) this may not be everyone's cup of tea. Sharing the following for those who might be interested.
Was very pleased with the Mr Peanut bread recipe that was discussed on this site. GF made it and taught me to make it - - the simplicity of the recipe is remarkable and the results delicious. After maybe 15 loaves and a lot of experimentation with variations of the basic recipe we began to grow tired of the peanut flavor. Also recently learned about phytic acid in nuts and grains that can bind with calcium and minerals to prevent intestinal absorption so we were looking for an alternative to peanut butter and to replace all of the nuts we used to eat. Since hemp seed is big in our diets, the thought of making the Mr. Peanut bread recipe with hemp butter presented itself. Yesterday we did this and the results were amazing so decided to share with you here. The hemp butter in place of peanut butter in the recipe made a wonderful bread with a much more neutral, mild taste that should blend well with many different variations from garlic bread to dessert breads – although we have so far only tried a dessert bread with Splenda, cinnamon, pumpkin pie spice, chopped pecans and dried cranberries infused with blueberry juice. Even the “normal” people in GF’s family loved this bread.
Note, hemp butter is more expensive than peanut butter. Manitoba Harvest recently stopped selling Hemp Butter but put on their web site a video of how to do it. The only thing we did different was to toast the hemp seed before making the butter.
If you are interested, this is how it was done:
Made our own hemp butter by toasting raw hemp seeds in a large skillet then blending them to “butter” in the Vitamix blender. We like the flavor of the toasted seeds and toasting browns the seeds so the butter ends up visually resembling peanut butter. One 8oz package of Manitoba raw (not organic, but that is available), toasted and blended made one cup of hemp butter. Exact amount needed for recipe.
Mr. Hemp Bread recipe
Ingredients:
1 cup hemp butter
3 jumbo eggs
½ tsp baking soda
1 Tbsp vinegar
That is the basic recipe. Make it plain like that add optional sweeteners, salt, seasonings and flavorings, cinnamon, nutmeg, pumpkin pie spice, nuts, dried fruit, salt, basil, oregano, sundried tomatoes, cheese, garlic, etc.
Directions:
Mix hemp butter and 3 eggs until smooth, add baking soda and mix well. Add any optional ingredients now before adding the vinegar. Then working quickly vinegar, mixing well and quickly pour into sprayed 8”X4” or smaller loaf pan (if you use a standard size, or larger loaf pan you will need to double this recipe) Bake at 350 for 40 minutes or more depending on your oven. To determine doneness, touch center of loaf to feel for firm consistency; when it is done you should not feel a “give” as if it might still be gooey under the crust.
