I've got my 2nd check up with Dr, K coming up.....can't believe it's been that long. I'll only be out there a couple of days, but hope to get together with Shireen.
Tried the pancakes. That were good but it took me an hour to eat them and ended up upsetting nmh stomach like with scrambled eggs. So the search for a new breakfast goes on.
B: bacon, cream cheese pancakes
S: pumpkin bread
L: Swiss cheese on slice of WW bread

D: meatloaf, baked potato
V: one batch left

E: grocery shopping, started laundry, housework
Hmm...I wonder if the ricotta cheese pancakes would be easier on your tummy. I was able to freeze and reheat them when I made that batch of blueberry pancakes. I'll look up the recipe and post it in the morning.
I see from Facebook that Shireen has a new house. I hope you guys can get together-that would be fun.

Ricotta Blueberry Pancakes
3 table spoons of either all purpose flour or Gluten Free Bisquick
2 teaspoons Splenda granular
1 teaspoon baking powder
1/4 cup egg substitute or 1 egg
1/2 cup ricotta cheese
2 oz fresh blueberries
Directions
1. In a bowl, combine flour, Splenda and baking powder. Stir in egg and ricotta cheese until well blended. Gently fold in blueberries.
2. Pour 1/4 cup of batter onto hot griddle for each pancake. Coo****il bubbles form on top, then turn to brown other side. Serve immediately with choice of condiments.
* you can use almond flour or CarbQuick instead of flour...you might try coconut flour
