evening batch: starting

B: double scoop protein shake w/heavy cream and coffee (52 grams protein)
L: one large impossible cheesy chicken broccoli pie --see recipe below-- (26+ grams protein)
S: single scoop protein w/cream (26 grams)
D: chicken & rice soup
S: 2 pb no flour cookies

The rest is pending my mood .. it may involve shrimp as a snack and soup for dinner .. we'll see!



Impossibly Easy Mini Chicken 'n Broccoli Pie

I made this is a 6-cup muffin pan. The serving size for these babies is 2 regular sized muffins so I just made 6 large ones making each one a serving. 280 calories, 26 grams of protein and 11 carbs. Not bad at all! Imagine the possibilities for recipes! You can even use gluten-free Bisquick in them if you want to make it GF. I used about half a chicken in this, or a little less. The other half went into my chicken & rice soup.

I'll be laying off the chicken selects (aka southern fried chicken) as the flour has given me a bit of gas (not stinky, but I just hate bloating). I was just getting bored AGAIN... methinks Subway chicken salad tomorrow.

Dang shame you have to cut back on the fried chicken. I made some this evening using a gluten free flour. Worked out real nice.

Mammogram today...fun. LOL

Actually, although I'm eating more carbs than I should, this was a pretty good day. The frittata muffin is all meat, eggs and veggies. The trail mix was the splurge.

Yes, right now I'm just cruising. Sometime soo I'll knuckle down....maybe.

Still very tired all day - think it was a change in BP meds so experimenting with doses now.

4 eggs with cheese
1 can tuna with mayo and relish
baked cheese
hemp seeds
1 Tbsp peanut butter
lots and lots of roast beef and some carrots and a couple pieces of potato - so good!
1/2 c cole slaw
big bowl of green beans and ham
a small handful of semi sweet choc chips
yogurt with flax and chia seeds with a big glass of water

All vites and increased calcium - switched to Ca  apatite (sp?)

Exercites: no hooping but did one hour exercize class.

RNY to DS  210 lbs gone for 5 years.
