Having some weird symptoms

 Going gluten free helped me reach goal weight, broke my stalls. Now I'm adding back a bit of white flour products, feel way too full and uncomfortable.

Yeah, humans in general aren't supposed to be eating processed foods like that anyway. Most people feel like crap after eating gluten products but don't put "2-and-2" together and realize that's what is causing a lot of problems for them (pre & post-op).
Congrats on getting to your goal weight! :)

Bloating later in the day would point the finger at food.  Intolerances creep up slowly, so it's worth checking your carbs, artificial sweetener (even sugar free gum can cause problems) and powdered milk.  Just coz somethingh was OK once doesn't mean it won't change.

Are there any food differences you can identify between your bloat and no bloat days?  If not it could be due to something you're only slightly intolerant to.  Eg you get away with a bit one day, but by the second day your body's decided it's too much.

I used to get terrible bloating in the evenings.  Had to wear bigger clothes at night 'cause it was so bad. Then one day I heard Suzanne Somers mention that eggs made her bloat.  I didn't really expect to get any results but thought It couldn't hurt to eliminate them for a few days.  Wow!  What a huge change.  I was shocked at the difference it made.

 You say that your labs are "fine".  Are you able to define "fine"?  I ask because so many people trust their docs and don't actually know the numbers and what they mean.  My docs office has a range that they consider normal, but don't look for downward trends or anything.   Perhaps something is still in range, but has dropped quickly over the last year - there may be something to that and what you're feeling - just putting that out there.

Now for the bloating, I'm also on the bandwagon that it was probably something you ate around lunchtime.  My lunch hits me on the way home, usually, with bloating and gas if it's gonna happen.  Another thing to throw out there is probiotics. It doesn't have to be another pill.  I do wonderfully with a dose of yogurt every day.   If your bugs are unbalanced, they can cause bloating, gas, and stronger stink.  I can tell the difference by the stink in the bathroom when I haven't had yogurt in a couple of days.

Lactose or whey intolerance can cause gas and bloating.  Sugar alcohols (SA) (ending in *itol).  SF products.  Are you taking any chewable vitamins, mine had SA.  Gluten...  
You can try a total elimination diet, back to basics.  I also found that I can't do onions and raisins.  There are more, but the whey elminated lots of protein shakes.  Now, I use eggwhite shakes.  

Posting your lab results will help.  My PCP thought my D was good at 34.  NOT!

Thanks to everyone for these thoughtful responses.  I have somethings to follow up on now.  I'm pretty sure it is not a thyroid problem.  It may be gluten, it may be depression, it may be excess b vitamins (I have already cut down and am feeling much better) , and it may be time for me to try a probiotic again.

I appreciate everyone's feedback.

I will follow up if I have any definitive results.
