Gained 1 lb. 3 weeks out of surgery?! Is this normal?

I am no expert. I haven't even had my surgery yet. I don't think one pound is anything to be alarmed by. It could be water weight or something along those lines. Bread may be a bad idea this early out though. I am no expert , so I am pretty sure one of the vets here can give you a better answer. :)

Hmm, It's probably fluids but I was told only to eat a half a piece of bread and only at about 5 weeks out. I think there are a lot of carbs in milk too. I would try cutting the carbs and see how that goes. I am by no means an expert but by three weeks out I had lost about 25lbs. Maybe don't weigh yourself every day so that if it is fluid weight you won't even see it.
Three weeks out and eating bread already. Really? You realize that your body absorbs simple carbs at 100%, but protein only at 50% and fat at 20%. You have a tiny stomach that you are supposed to be filling with protein. What you need to be eating is lots of cheese and protein shakes and anything else protein and fat based. Don't even think about bread.

1) STOP eating the bread...way too early for that and you need to stick to protein based foods first.
2) GET off the scale, throw it away or hide it.
3) Did you know that you NEED the fat in whole milk? And it only has one more carb than 2%. Our bodies cannot digest the protein or absorb the calcium from milk without the fat.
3) People tend to either stall or gain about week 3...that's the reason for item number 2 ^^
