Anyone bake with almond meal in place of flour??
I do! Well, sort of. I use almond flour, not almond meal. The diffference is probably texture or the coarse/fine of the grind.
Anyway, I especially like it in cookies -- in oatmeal cookies I substitute directly for the all-purpose flour in my favorite recipe. Taste is the same, they are tad crumblier.
In other cookies and cakes I have had to experiment with substituting. I have found I can always substitute for half, and usually more.
I also tried peanut flour for peanut butter cookies and I did a dark choco chip cookie with half almond flour half peanut flour. That was excellent. Not a normal chocolate chip cookie, but really good.
Oh, I use Splenda for the cookies in full substitution of the sugar.
I think the fact we can have fat makes the baking possible with such great results. If you have to substitute low fat ingredients it will take more experimentation.
