Mexican Bean Soup

This is a recipe that I was able to eat at about three weeks out.  It is heavy in protein because of the beans and meat.  I didn't care too much about the carbohydrates at the time, because I just needed something, anything, to eat!

Mexican Bean Soup
2 lbs ground beef, ground turkey, or shredded chicken
2 quarts stewed tomatoes
15 ounce can, white Hominy
15 ounce can black beans
15 ounce can pinto beans
15 ounce can kidney beans
15 ounce can of black, or any any other kind of bean you chose
3 Tb powdered ranch dressing
3 Tb taco seasoning

1 sm can chilies, optional, chopped, for heat

Cook the meat and drain the fat.  Add all the ingredients in a big pot and cook.

Add shredded cheese and sour cream when the sou******ved, if desired.

Some misc notes:  Don't have the chilies unless you know you can tolerate spicy food.  You can add or substitute salsa for the stewed tomatoes for an extra kick.  You can purchase large containers of powdered ranch dressing and taco seasoning at Sams Club if you find you might want to make this more often.  It will save you some money.

I used to have all the nutritional information, but sorry, I can't find it.  It makes a big pot.  It freezes well!
