Eat avocado and lots of yummy olives :-).
Suggestion for potato substitutes: Rutabaga aka yellow turnip and kohlrabi. Both are very low carb, mild tasting and cook up with a fairly similar texture to potato, especially if fried thin sliced from raw in very hot oil. If you fry them too slowly they'll kind of crumble apart.
They also make a marvelous mashed potato alternative, bring on the butter or cream cheese and other fabulous additives for MORE FAT :-D.
