They are a tiny bit richer than chicken egg, and have more protein - that's why I initially tried them. they are a little more expensive, but chicken eggs have gone up enough that there is less difference in price than there used to be. I find them at co-ops, and the farmers market.
Back when i was a kid living at home we had geese. Mom would use their eggs in baking but she never fried them. I remember a lady stopped by the house and wanted to buy a couple of goose eggs, said that she was a waitress and had a guy come in every morning and complain about the small eggs that they served.

Most of the protein is found in the albumin (white part). About one fifth of the protein is found in the yolk along with and all of the fat / cholesterol is found in the yolk. As a food, yolks are a major source of vitamins and minerals.
I like yolk, but not enough to make one egg with four yolks though...lol.
