I'm a huge fan of a good stew. Post DS this has become my fall favorite. It's perfect for a DSer and it gives me now bathroom issues at all. Actually, it helps "firm things up" quite a bit! I make a huge pot on Sunday and eat it every night for dinner for a week or take it to work. You can throw in cheeses of all kinds to change up the flavor. I'm absolutely hooked!

Ingredients

  • 2 pounds cubed beef stew meat
  • 3 tablespoons margarine
  • 1 onion, chopped
  • 4 carrots, sliced
  • 1 jalapeno (seeded)
  • 3 stalks celery, sliced
  • 1 clove garlic, minced
  • 2 bay leaves
  • 1 teaspoon salt
  • 1 teaspoon white sugar
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon paprika
  • 1/8 teaspoon ground cloves
  • 1 teaspoon lemon juice
  • 1 teaspoon Worcestershire sauce
  • 4 cups water
  • 1 bottle of medium/dark beer

  1. Melt butter in a skillet, and cook coated beef cubes until evenly browned.
  2. Transfer beef to slow cooker and add onions, carrots, celery, jalapeno, garlic, bay leaves, salt, sugar, pepper, paprika, cloves, lemon juice and Worcestershire sauce. Pour in water, beer and stir. (I also throw in mushrooms and turnips in my recipe)
  3. Cover and cook on LOW 10 to 12 hours or on HIGH 5 to 6 hours. Serve hot!!

would you please tell me the exact kind of beer you use?

i know nothing about beers and I'm afraid I'll pick a nasty one to use (well, all beer tastes nasty to me, lol)

OMG.  You had me at BAY LEAVES.  Have you tried the smoked paprika?  I make my stew by first burning the meat.  No kidding.  The flavor is incredible.  Also, I get better yeasty taste when I use Simply Red wine instead of beer.  To each his own.  The bay leaves are the secret, I think.  Ever tried 6 bay leaves in chicken soup?  MMMMMmmmmmmmmm  Oh, and lots of onions and celery.

Ever try rutabaga in your stew?  It's odd, but yummy diced into teeny tiny bits.  Looks like carrot.

I.  am.  not.  a.  doctor.
