I dont know the answer about how it interacts with vitamins, but I just wanted to say I'd be careful about adding bananas in so early after your surgery.
I'm not militant about carbs, and never was - but the banana is a lot of carbs that is dense and will take up lots of stomach room. Early out you're going to need that space for protein. If you really love bananas I'd consider them a once in awhile treat, and definitely not a routine thing.

Depends what you're trying to achieve.
Vitamin interaction wise, should be fine. Though there is some discussion that copper and iron actually shouldn't be taken together. Just keep an eye on it.
Protein wise...not great. I can think of a lot better breakfasts for someone 2 1/2 months out. Should be fine occasionally, but I wouldn't make a consistent habit of having a banana every morning. It is also possible that the sugar and resistant starch in the banana could cause some GI distress.

You're probably fine taking the copper and iron together. I've taken them together from 9 months post op and both iron and copper markers are great.
