Could anyone use a muffin?

 I just made these and I am a happy girl!

2 C Almond Flour
2 teaspoon Baking Powder
1/4 teaspoon Salt
1/4 C Splenda (what I used, but can use liquid up to 1/3 cup)
1/2 C Butter, melted
4 Eggs
1/3 C water
Preheat oven to 350 F

Butter (I used Pam) 12 cup muffin tin.

Mix dry ingred together. Add wet to dry & mix thoroughly. Poor into muffin tin 1/2 to 2/3 full and bake about 15 minutes.

I also added 1 teaspoon of cinnamon. You could also add 1 C fresh or frozen blueberries or put a teaspoon of sugar free jam & push slightly into middle.

Each muffin has 1.5 gr carbs, 6 gr protein & 185 calories

Sounds good to me.  Guess I need to get some almond flour.  Can't wait to try these.

 They are nice and moist. Wonder if we could slip some protein powder in in place of some of the flour? Hmmm. That will be my next venture.
