My first real food dilemma. Need help !!

I'm on a team for the first time in my life!  That is a good thing!!  (Never would have happened 100 + lbs ago).

The challenge is that they plan meals to share which is going to be something I am going to have to figure out how to manage.

This first meal they say they are doing the "usual" spaghetti and bread.  And margaritas.

I need ideas about what I can take to share and what the heck I am going to take to eat.  I don't have any problem saying I am gluten intolerant (which I am).  I can't even have a nibble of spaghetti or bread so I won't be tempted.  I can't drink margaritas either, altho I CAN drink straight tequilla but I think I will be much better off to stick to water!!!

I just don't know what to take to share and what to take to eat.  They will be cooking this meal in someone's motel room.  And I will be arriving via a ride with a friend after a 4 hour drive.  I'm not sure how much room I will have to bring stuff along and I won't have access to a grocery store after we get there without asking for someone to drive me.

Please chime in with all your ideas!!!  Thanks much.

I think that is a great idea.  I can make the meatballs and freeze them and then put them in the cooler.  By the time we get there they will be thawed.  I can ask if I can heat them with the spaghetti sauce that someone else is making don't you think?

I would like your recipe.  I'm afraid the store bought ones will have something in it that I can't eat.

THANKS!

Tara,

Also can you tell me how many meatballs or how much ground beef to prepare per person?  I don't have a headcount yet but it will be around 20 people.

THANKS!

Becky, you can just substitute Parmesan cheese for the breadcrumbs in any recipe and it would work, use Mozzarella cheese as the binding ingredient. I make my meatloaf with the Mozzarella and it tastes great.
Good Luck and enjoy.

Now that sounds good.  Can you tell me how much parm and moz cheese to use?  I am NOT a cook but I can follow recipes pretty well.

Thanks Dawn.  A couple of questions.  Is there a way to make them without the bread crumbs?  I can't eat bread crumbs. Is it necessary to use lean meat or is that just a leftover direction from pre-DS days? Also do I cook them and then freeze them?

Thanks!!!
