For bakers. Is there a sugar free cake frosting recipe?
I am loving the H.E.L.L. out of Kayla B's high protein very low carb/gluten free chocolate cake. Wondering if there is a recipe for a cake frosting made with splenda? I can't do sugar alcohols. I only need to make a little bit, not enough for a real cake, just enough for an individual size cake.
THANKS!!
How I make Kayla B's little cakes:
1 scoop Champion Pure Whey Stack Chocolate Protein Powder
1 T dark cocoa powder
1 T vanilla extract
1/2 tsp baking powder
3-4 T splenda
3 T veg. oil
Water to make it pretty soupy
Nuke in a 16 oz bowl for 35 seconds.
This makes a molten texture. Less water makes it more cake texture.
PS There aren't many carbs in that, are there? woo hoo!!!

Becky,
How about a chocolate ganache? You could even let it chill for a little bit and then beat it until fluffly like a buttercream.
Chop 12 ounces of unsweetened chocolate. Heat 2 cups of cream plus 2 tablespoons butter to the boiling point, then remove from heat and add the chopped chocolate. Stir until the chocolate melts, then add the Da Vinci syrup(flavor of your choice) to get the sweetness level you prefer (start with a tablespoon).

Eggface has a few recipes on her blog. Here's one for cream cheese frosting:

Splenda doesn't do a powder sugar substitute. Their standard frosting recipes calls for flour which would defeat her gluten-free cake.
I haven't tried this one yet, but it sounds like it might be good:

I can't find them at my Walmarts, but my Mom (in TX) can get a couple of different sugar free frostings in the tub. She said they are excellent.

I've made frosting this way too. I also like to add a little extract for flavor, such as lemon or almond. My favorite that I've tried most recently is RUM extract. Just a little bit and it creates a wonderful flavor on chocolate cake

Pillsburry makes a Sugar Free frosting (and cake and brownie mixes for that matter). It's called "Creamy Supreme Sugar Free Frosting." It comes in vanilla and chocolate. It is made w/Splenda...I am not sure if they have sugar alcohols.

It tastes pretty close to the original, but I find I have to whip mine up a bit in the mixer to make it creamier.
