Craving a sweet treat? Try this.
My husband, who has been low-carbing of late (and lost 20 pounds!) turned to me after dinner tonight and said "We don't have any 'fun' food in the house anymore." He went into the den to sulk, and I made him this:
3 minute mug cake
4 Tbsp almond flour
3 Tbsp cocoa
3 Tbsp Splenda
dash of salt
1 egg
3 Tbsp cream or milk
3 Tbsp oil
dash of vanilla
Whisk it all together in a coffee mug and microwave for two minutes. Dust the top with cocoa.
So, I brought this into my DH and handed it to him. He looked at it like it was an alien blob, and I said "Take a taste." He spooned some up, tasted it, and said "Now THIS is fun food." Try it - you'll like it. I think you can make it with one scoop of protein powder instead of the almond flour. I'll try that next time.

I get it at a local health food market here in Ludington, Wanda. Trader Joes has it for so cheap that I also stop when I got back to Detroit and stock up on it and freeze it. You can also make your own - just take almonds and process t hem in a food processor! How are you feeling?

I make this quite often. You can make it into a "lava" cake by adding SF Hershey's syrup at about a minute into the cooking, then a little more on top when it's done. I will sometimes have this with a scoop of Carbsmart vanilla ice cream, or fresh strawberries soaked in Splenda too. NOM!
