Dreamfields Pasta

Forgive me if this has been asked before ... I picked up a box of Dreamfield's pasta today at the store.  The box says 1 serving has 42g carbs, 5g of fiber and 7g of protein.  Normally, you'd take 42 carbs - 5 fiber for a net carb value of 37.  However the box claims Total Carbs 42 - Protected Carbs 37 = 5 digestible carbs. What in the world is a protected carb?!  Something just doesn't sound right here ... Does anyone have any insight?!  Is this stuff worth eating, or is it just another carb? Thanks!

i got this from the dreamfield website: Protected carbohydrates or "resistant starch":  These are carbohydrates that resist being digested particularly in the small intestine. When they cannot be digested in the small intestine, they pass to the colon where they perform as dietary fiber. They may occur naturally, be created by chemically modifying carbohydrates prior to ingestion or achieve resistance through properly formulated foods being processed by the body.  Resistant starches occur naturally at various levels in many foods, like cooked and cooled potatoes, unmilled grains, seeds, legumes, bananas, and high amylase starches. Most resistant starches are produced by concentrating naturally resistant starches and/or by chemically modifying carbohydrates in order to produce a starch with low digestibility.  Dreamfields creates protected carbohydrates without chemical modification by utilizing combinations of standard food ingredients to "protect" digestible carbohydrates from being broken down by digestive enzymes. Carbohydrates resistant to digestion have been shown in scientific study to help control blood glucose, blood cholesterol and blood triglyceride levels, normalize insulin levels, and help improve the health of the colon lining, thus reducing the potential for ulcers and inflammatory diseases of the large intestine.

I had been under the impression that Dreamfield's pasta was LOW CARB. So what is with the 42 g of carbs per serving? That doesn't sound low to me.

I read that description too on their website, but I didnt really understand it. I am afraid that as it is non-digestable that it will give us horrible gas.... cause I am very interested in trying it (DH is diabetic) but I was afraid! If anyone tries it with good results and no bad gas issues, please post!

protected carbs is similar to dietary fiber. i make my own pasta - macaroni, lasagna, rigatoni, spaghetti, etc. my hubby is diabetic as well. making it i know what goes in it. as for me, making my own pasta i've noticed i don't get any negative side effects or gas issues. same thing if i buy the bertolli fresh pasta brand. i don't buy the boxed type of pasta. i personally do not like dreamfield pasta. that is me. boxed pasta does gives me some gas issues. when i go to restaurants i sometimes ask them if their pasta fresh. i like ordering spaghetti, angel hair, fettucini with shrimp scampi, lobster, fettucini, marinara or meatballs. if i have the criolle spaghetti, they use the boxed typed and i will have some gas issues with that so i am careful when i am out. i will either avoid the dish or not eat too much of it. i usually will share it off my hubby's plate.

If you don't mind me asking, how do you make your pasta?  I'm pre-DS but the thought of some healthy pasta is very appealing.  Thanks.

Dreamfields has been proven true by the diabetic community. I have used since it's inception and have great results. It has no effect on my blood sugar. Being a nurse, I had to prove it to myself. I'll see if I can find the diabetic info I once had. Jinjer
