Here is a great recipe I made today that I sort of "made up". I wanted to share it with you because it was soooo good! You gotta try it!! Apple and Chicken Crepes 2 large chicken breasts (or one whole roasted chicken from grocery store) 2 apples peeled, cored, and cut into small pieces 2 cans Healthy Request Cream of Chicken Soup (Campbells) 1 pkg of Crepes..I found them at BiLo in the fruit area in a square pkg. 4 slices swiss cheese, or cheese of your choice, white cheese is best 2 dashes of cinnamon 1 tbsp seasoned salt 1 tbsp poultry seasoning 1 tsp garlic powder In a bowl mix shredded chicken (or cubed) apples, and 1 can of cream of chicken soup. The Healthy Request Campbell's is best. Add to this one dash of cinnamon and seasoned salt, seasoned pepper, poultry seasoning, and garlic powder. (You can adjust to your taste, but it becomes bland if you are not careful). Remove crepes from pkg, and be careful when peeling them from wax paper, they rip easily. Put a good heaping spoonful of chicken/apple mixture onto one end of crepe and roll up. Put crepe into greased (pam spray) baking dish, seam side down. Makes about 8-10 crepes. In a small pot add one can of Cream of Chicken soup, Carb Countdown Milk (about 1/2 cup), dash of cinnamon, pepper, salt, and garlic powder and poultry seasoning to taste. Let it mix up and warm through. Pour over crepes in dish, add swiss cheese to top, and bake 350* approx. 30 minutes until bubbly. This was very low fat, low calorie, low sugar and very healthy SOUP NUTRITION Calories 80 Total Fat 2.5g Sat. Fat 1g Polyunsat. Fat 0.5g Monounsat. Fat 0.5g Cholesterol 10mg Sodium 460mg Potassium 340mg Total Carb. 12g Dietary Fiber 1g Sugars 2g Protein 2g % Daily Values** Vitamin A 10% Vitamin C 0% Calcium 0% Iron 0 Crepes had 1 gm of sugar Very, tasty, I ate one whole crepe, and wanted more, but I was full.
