Hi Brothers and Sister in Christ,
I had a great weekend. My good friend and daughter came over and we laughed alot. Always fun to laugh. Well I made a recipe that a friend had given me for a cheese casserole - never had made it before but thought "what the heck!" Oh my goodness - soooooo delish. So here is my plan - I will put the recipe here and if any of you would care to share your fav recipe (post op friendly of course) please do so. By the way - I think this casserole is fab on its own, but it could even be dressed up on occasion with left over shredded chicken or turkey. Enjoy!
Smokey Mushroom Cottage Cheese Spinach Casserole
2 cups cottage cheese
4 eggs, beaten
4 tablespoons flour
1/2 cup smoked cheddar or gouda, shredded
1/2 cup provolone, shredded - I subsituted swiss because I didn't have provolone
1/2 cup feta, crumbled
1 10 oz. pkg. frozen chopped spinach, thawed and squeezed dry
1 med. onion, chopped
1/2 cup mushrooms, sliced
1/4 teaspoon black pepper
2 tablespoons melted butter
salt to taste
dash of garlic powder
Shredded parmesan cheese, about a quarter-cup
Mix together ingredients and place in greased casserole or lasagna dish. Bake uncovered at 350 degrees for 55 minutes. Top with parm and bake another 5-7 minutes or until cheese is melted. Portions work out to be about 8-10 servings.
