Morning, all!  Hope some folks join me in logging your food and/or exercise :)

Drinks
Pro drink 1
60+ oz of water

Eats
1/2 c Greek yogurt with frozen berries and Fiber One
1/2 c Mango chunks
1/2 c Leftover Sangria Sisters Orange Chicken
Spinach salad with grilled chicken and cherry tomatoes
1/2 c Cottage cheese and small handful of baby carrots

Exercise
30 minutes elliptical

Good Morning Everyone...

and Good Morning Michelle....
 
I am here as usual... I am not posting on the weekends so I can have time with hubby... he is not home all week and some weekends he isn't here either so when he is we spend every minute together we can.

The anti-biotic has taken over and I feel a lot better now.. still congested in head but no pain...YAY... have doctors appointment Thursday so I will know then how I am doing.. I also will get the results of my 6 month blood work that day..

B: Breakfast wrap. These have changed a bit lately cause im using what I have on hand. So today it was wheat tortilla, 2 tbs PB, 1/8th cup Fiber One cereal, 2 tbs light yogurt, 1/8th cup granola. I got through two bites and was FULL. Wow that fiber is filling!

L: Left over Fajitas! YUM!

S: Either an Apple or Pear, probably Pear since it is so ripe.

D: Not sure yet, Probably my new trial recipe of meatloaf stuffed green peppers.

S: Trying to cut down on late night snaking but if I go for one either a SF popcicle or a quaker mini delights 90 calorie pack. I know its a lot of carbs but omg chocolate and mint!

Drinking:
12 oz Coffee w/ double shot espresso.
40 oz water
Extra water at home

Exercise: Hubby and I are training to walk a 5k in June so it will either be a 30 minute walk or a 4 mile bike ride.

I would love to have the recipe for the stuffed green peppers.. never hear of them stuffed with meatloaf.. also if you know the calories and protein amount for it..  that sounds so good..

I just threw the recipe up on Sparkpeople yesterday so that I could track the calories.

I did change it around a little based on what I had.

Instead of ripe tomatos I used about half a cup of salsa
I did not need any bread crumbs
I used about 1/4 cup instant brown rice for the rice.

It wouldnt let me put a quantity for green peppers only a weight, I used 4 medium sized peppers, but had enough meat mixture for 5. Sliced the tops off and used what was there of green pepper within the mixture. Also the weights on the meat is kind of odd too. I used 1lb total, half was lean beef and half was lean pork.

This was the first time that I tried this and it was very flavorful!

Thanks so much Crystal for taking the time to do this..

I will go to the sparkpeople site and get the recipe.. I really appreciate it.. I have not been cooking too many recipes yet and I really watch my sodium.. but I bet I can tweak it to lower the sodium and calories.. I do not eat pork.. only 90 to 97 % lean beef or turkey burger.. I will also probably use salsa and the fresh I use only has 5 calories per tbsp and low sodium.. so I will work on making this work for me..   I will be six months out in about 2 weeks so I am hoping to start to make recipes instead of just plain meat items.. .. this one sounds so good..
