Rise 'n shine!!  I'm enjoying a few moments of peace before my kiddo (she's 10) comes downstairs.  For Easter she's getting a basketball and a chocolate bunny.  We don't really do a traditional Easter with baskets and eggs here, but I usually get her a small gift.  She just wrapped up her bball season not too long ago, but we gotta keep her mad skillz growing in the off season lol.

Homemade Tofu with Pork and Cashews (see below)

Michelle's Tofu with Pork and Cashews
Makes 6 servings eaten without rice.  It would probably be 8 servings if you added rice and stretched it out. 

Ingredients
  • 7 oz firm tofu, drained and diced into 1/2in. cubes
  • 1 cup low-sodium chicken broth
  • 2 tablespoon cornstarch
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoon oyster sauce (found in Thai/Asian area of supermarket)
  • 3 teaspoons chili garlic sauce (found in Thai/Asian area of supermarket) - bump up to 4 tsp if you like things spicy!
  • 1 tablespoons canola oil
  • 3/4 to 1 lb pork loin, cut into small strips
  • 1/2 Tbsp ground ginger
  • 1 tablespoon minced garlic
  • 1/3 cup chopped green onions
  • 1/4 cup diced cashews (the halves shown in the picture made it difficult to get a bit of nutty taste in every bite)
  • 1-2 cups cooked veggies (broccoli, snow peas, green beans, carrots - whatever veggies you like in Chinese stir fry)
1. In a small bowl, whisk together broth, cornstarch, soy sauce, oyster sauce, and chili garlic sauce.
2. Warm oil in a large skillet over medium-high heat. Stir in pork, and cook 2 minutes, stirring constantly. Stir in ginger and garlic. Then stir in tofu, and coo****il golden, about 4 minutes.  Add in cooked veggies. 
3. Stir in broth mixture, bring to a boil; simmer until mixture thickens, about 1 minute. Remove from heat. Serve garnished with green onions and cashews.  Serve over brown rice if you prefer.

Thanks for the recipe Michelle.. it sounds good...I have to try it.. 

Easter was a little different for me.. we had sunrise breakfast at church then a lunch at home with all my family coming over. I had to cook for others.. I had not done that yet..

I didnt keep up with calories or protein or any of it for the day..
