I hope whomever is up first in the AM will start this thread!  Somedays I can't pop by until after lunch, so definitely don't wait on me.  :)

Today we're driving out of town to visit a friend who also had WLS... interestingly, we met via ObesityHelp!  She's awesome and so inspires me.  After we visit for a bit, we're heading to a paint your own pottery place.  My kiddo and I have been before and always have a great time.  I find crafty type things like that so relaxing.  :)

Protein decaf coffee - 165 / 30
Nectar Twisted Cherry protein drink - 90 / 23

String cheese and turkey pepperoni  - 95 / 12

1/2 c. Mock "fettuccine alfredo" - see below - 50 / 2
Meatless taco salad - 1/4 black beans on a small bed of lettuce, topped with 1/8 c shredded cheese, couple Tbsp's greek yogurt, and salsa - 150 / 8
Apple crumble - see below - 115 / 2

EXERCISE
EDITED:  20 min. elliptical workout instead - got it done!

Apple Crumble
Small apple diced and sauted (with PAM) with cinnamon, splenda, and 1/2 Tbsp dried dates.  Put into ramekin and top with a very small mix of rolled oats, TVP, walnuts, splenda, cinnamon, and 1/2 Tbsp Olivio spread.  Bake at 350 for 20 min. and top with 1/2 Tbsp sf caramel sauce.  Stats will be completely dependent on your portions.  Next time I may find a way to work vanilla protein powder into the crumble part.

Mock Fettuccine Alfredo - from this blogger.
"Take a nice, raw zucchini and use a carrot peeler to make flat, long strands of zucchini (that look like Fettuccine noodles). Just pretend you are peeling it but make narrower strips, and stop when you get to the seeds. Throw the seeds away or cook them separately (too watery for this dish). Then, put the zucchini strands into a saute pan with a bit of chicken broth and simmer for about 3-4 minutes, until tender but NOT mushy! The broth will mostly evaporate (don't use too much... just enough to cook them and leave a couple Tablespoons in the pan). Turn the heat down. Add 1-2 wedges of Laughing Cow Light cheese (the triangles... the 35 calorie ones). I cut mine into pieces before adding it to speed up the melting. Then sprinkle with garlic powder, black pepper, and a bit of sea salt. Stir and toss GENTLY until the cheese melts and makes a creamy sauce. Add a bit more broth if you need to."

My notes:  Cooked in water, not broth.  I used 2 wedges for one medium size zucchini.  It made two half cup portions.  I topped with just a small amount of parm cheese.  Next time I'll add cooked carrots, broccoli, and maybe even chicken chunks!  This was REALLY good.
