Baked beans with Splenda?!?!? Wow, cool!
I am currently running an experiment here. I got a free crock pot on Freecycle the other day and wanted to try it out. I'm trying to make vegetarian baked beans with splenda...so far I think it's a hit! (Not quite done yet)
I used ~
1 1/2 cups pintos (I know weird...I was out of white ones...lol) boiled in plain water for 40 min on the stove(no need to soak)
One cup tomato puree
1/3 cup Splenda
2 TB Black strap Molasses
2 TB prepared (Fluorescent yellow) mustard
1 1/2 teaspoons salt
a drizzle of canola oil
few shakes of pepper
3/4 cup water]
one decent size onion chopped up
Throw it all in the crock pot, set to low and cook 5 hours-ish (not sure yet) I tasted them, almost done (been 3 hrs 45 min now) I think I like this..kinda gross sounding but not shabby!
I missed baked beans alot.

Yum, that sounds really good! We've played with some baked bean recipes in the crock and in the pressure cooker and in the oven, and Splenda & molasses are a great sugar sub...I think the mustard is esstential, too! A favorite food, for sure! Way to go on your experiment...sounds successful!
PS: Good to hear from you...I'm down over 130 lbs, yay! Having trouble parting with old clothes, but totally need to...right now, it look like the clothes are winning as they are everywhere (giant garbage bags, overfilled drawers, closets, clothes rack, etc. etc etc! But I will win this battle, dammit!
