Morning Everyone,

I think we have stepped back into winter - It was 24 degrees this morning. Brrrrrrr....

Tell me what you are eating and how you are moving your body today?

B- Ricotta pie with chicken it sausage
L- Tuna with 4 tj flaxseed crackers and salad
S- Protein Iced Coffee
D- BBQ Chicken Thigh with Green Beans
S- Sweet Ricotta Pie

Today I am trying to change things up once again because the scale has not moved in almost 4 WEEKS!!!!!!  I am destined to stay at htis weight forever

Wii FIt for an hr (I just got the acitve traner dvd)
Walk later if it warms up

I have not posted in forever!   Here are my goods for the day lol

coffeeeeee

B - Weight Control Oatmeal

water, water, water lol

L - 3 oz. turkey w/mayo, broccoli and tomatoes (I blanched some broccoli and after it cooled added some cherry tomatoes cut in 1/2 and added some EVOO and red wine vinager and spices)

S - cottage cheese w/blackberries

D - spaghetti squash w/sauce & turkey meatballs

S - sf popsicle (2)

more water and coffeeee...

 

How do you make your ricotta pie - sounds yummy!   I was on a Quiche kic****il it made me sick to my pouch one night lol no more of that for awhile.

It's Lesley's recipe and it is yummy!!

The Sweet Pie:

1 lb part-skim ricotta
4 oz light cream cheese (half a package)
1/2 cup of granulated splenda
2 tsp cinnamon (add more if you want -- I didn't measure)
1 tsp vanilla (I didn't measure this either)
2 eggs


Mix all ingredients with a hand mixer until smooth. Pour into a greased baking dish or pie plate. Bake at 350 for 25 minutes, or until the pie is firm.

*For my sweet version I omit the splenda and I use sf pudding mix (3tbsp or to taste) and it comes out super yummie!!!!*


Savory Pie

1 lb part-skim ricotta
1 cup of 2% shredded cheese (any kind you want! I used mozzarella in one, and Italian blend in another)
4 to 8 oz of meat (I've used chicken Italian sausage for one, and lean deli ham in another)
2 eggs

Mix all ingredients with a big spoon, not the hand mixer. Pour into a greased baking dish or pie plate (or muffin pan or ramekins). Bake at 350 for 30 minutes.
