What are you eating? Thursday
Another busy morning, but aren't they all? I have on a beautiful new outfit and I feel pretty today. When I got to Mom's she didn't stop talking about it. Mom's are so good for that aren't they?
Pre B - 1.2 SF NF BSC Latte
B - YUCK! I cooked old fashioned oatmeal with blueberries for Mom and decided I would have some too. I thought I'd add in some protein powder to make it healthier in mine. Oh my was it gag worthy! I've used this same protein powder in other things, but it didn't taste good in this today.
S - cottage cheese and Splenda peaches
ETA: S - Fresh warm unsweetened soy milk, I add some Splenda to it
L - Fake Mac n Cheese, some melon
S - turkey jerky
D - roasted turkey breast, a couple bites of roasted purple potatoes (just because they are cool looking) and a veggie
S - ?

So your fake mac 'n cheese turned out ok? Did you make changes to the recipe? I'm loving all the variations people are putting out there. I MAY try the tofu version if I'm brave enough.

I love when I feel pretty. It took getting used to because pre-op there was not a day that I felt pretty, but now I understand what my friends were talking about when they say they are having an ugly day. Today - I am having an ugly day. My sinuses have my eyes pink and itchy so I passed on mascara which then made me not care about how my hair really looked and then it went down hill from there! Oh well - yesterday, I felt pretty and that is when it mattered!!!

I was starting to think i was liking myself and the way i looked and boom i go to get a haircut and boy did they cut it.
Its so short and its going to take awhile to get used to.

Fake Mac 'n Cheese
Ingredients: 1 head cauliflower
1/4 c. milk
2 tbs. butter (I use I can't believe it's not butter)
1 + 1/2 cup sharp shredded cheddar cheese
1/2 c. mozzarella cheese
1/2 c. Parmesan cheese
1 egg, beaten
Salt and pepper
Instructions:
1. Boil cauliflower florets until tender. Drain and transfer to a bowl and add whatever seasonings you like (I like just salt and pepper and I use a good amount of it). Add milk and butter and mash with a potato masher until the consistency of rice.
2. Mix in 1 c. cheddar, all the mozzarella, and half your Parmesan, and your egg. Transfer to a casserole dish and top with more cheddar and parmesan.
3. Bake in a 350 oven, uncovered, for 30 minutes

Mmmm the cheese part sounds yummy. For the life of me though, I can't bring myself to eat cauliflower. Now that I can't seem to tolerate broccoli I probably wouldn't even have the guts to try cauliflower again as a post-op.

Yesterday was a low day for me. I got some fudge to take back to the Theatre for everyone to sample to see if we wanted to sell it in our concession stand. They were cut in 3/4" squares and I had a piece and then another one. About 2 hours later, I had another piece, then another. I was so disgusted at myself for doing it. I've found myself mindlessly snacking when I'm not even hungry. I always have my protein snack after weight lifting and I don't count that as mindless but man. So today, I've made the effort to keep my crystal light around me all day and when I want to put something in my mouth, I take a swig!
I guess pre-surgery, I would have considered this a defeat and let it all go and blow the diet. Now, I know that I have the realization to understand that I am making those stupid mistakes and am taking action to correct it.

post workout snack - 2 oz turkey and 1 slice 2% swiss cheese
L - 3 oz grilled fish/grilled veggies and side salad
S - navel orange
D - ?? we are going out for dinner. Probably fish or chicken.
