Filling in for Jenn this week - you know the drill.

Woke up to huge claps of thunder, lots of lightning and snow about 12:30 this morning!!!  OK, so it was really hail, but it covered everything and looked so cool. Not something we get often here in So Calif. It stayed on my car during my drive to Mom's and work.

Pre B - SF NF BSC Latte

B - cottage cheese and Splenda peaches

S - Homemade lemon poppy seed low sugar/fat mini muffin - leftover from the senior brunch I cooked for yesterday

L - Vietnamese Shrimp Spring Rolls, strawberries

S - Greek yogurt with fresh berries

D - In-N-Out Protein style (lettuce wrapped, no bun) cheeseburger and 5 or 6 fries

I have an addictive personality, what can I say. Actually I think it's more like when I find something that is good for me, that I like, and that grouchy pouchy likes, I eat it over and over.

A couple of the girls I work with are Chinese, they stop at a local market and get these and the fresh warm unsweetened soy milk that I drin****asionally.

There are 3 freshly made (while they wait) spring rolls, filled with 3 small shrimp in each roll, cucumber, cabbage, 1 green onion, and some carrot slices, all wrapped in fresh rice paper. I figured them out to be 60 calories each. I can't always eat all three, I think it depends on the day and the size of the shrimp!

I like that they are not full of rice noodles as most I've had are, and that they aren't fried.

They do come with a peanut sauce, but I don't use it often, I'm not crazy about it.

Ok - they sounded great and now that you described them they sound even better.  Too bad I work with a bunch of cajuns and I am sure I cannot find that anywhere near here.  If it isn't fried, they don't know how to cook it.  How about the local sushi restaurants now serve deep fat fried sushi rolls!?!?  Guess I am going to have to make a trip out west for some of these.  I am always looking for a reason for a roadtrip and this seems as good as any!

Thanks for the info - Clinell
